not your momma’s (vegan) banana bread

I’m not vegan, but I think baking with bananas instead of eggs yields higher quality results in general and especially in banana bread.  This very simple recipe makes one 8in x 3 7/8in loaf of very DENSE and MOIST and DELICIOUS banana bread.  If you are used to the classic, more crumbly/drier banana bread texture, this loaf will not meet your expectations.  However, if you can accept a fruity dessert bread with the consistency of a fudgey brownie, read on!

Ingredients:

2 large ripe bananas
1/2 to 1 cup applesauce (depending on desired moisture)
1/4 cup canola/vegetable oil
1/2 cup sugar
2 tablespoons molasses
1 cup all-purpose flour
1 cup whole wheat pastry flour
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2-3 handfuls of chocolate chips

Preheat oven to 350 degrees F.  Grease a 8 in x 3 7/8 in foil pan.

In a large bowl, mash bananas with a fork until you get a puree consistency.  Add applesauce, oil, sugar, and molasses.  Mix well.

Add flours, baking soda, cinnamon, nutmeg, and salt.  Mix until even batter forms.

Pour batter into pan, top with chocolate chips, and bake for at least 50 minutes.  If you used more applesauce, you might need to bake longer.  Check with a toothpick.

When finished, slice and enjoy!
